What is the best lobster to eat? This leaves the diner with several tough decisions: Should you have a soft-shell or a hard-shell lobster?
Will a large lobster be as tender as a small lobster? Should you choose a male or a female? Should you choose a green lobster or a red one? What is the best way to cook a lobster? How to eat lobster? What better place to discuss lobster anatomy than at the dinner table? Step 1 The first thing to do when your cooked lobster arrives is turn it over and announce whether it is a male or a female. Step 2 Next, take off the claws, which are also called chelipeds. Step 3 Gently remove the loose part of the claw. Step 4 Using a nutcracker, break off the tip of the large section of claw, revealing the meat.

Step 5 With your forefinger, push the meat from the tip of the claw out the larger open end. Step 6 Grasp the tail portion with one hand, and the back with the other hand. Step 7 After that, turn to end of the tail which has small flippers, or telsons, at the base. Remember to keep the head and body of the lobster, as it also contains lots of meat! Pull top shell away from the body and discard. Inside you will see the lobster liver called tomalley — it's green and is also edible.
If your lobster is female then you will also see the lobster's roe — or caviar! It will either be red or black in colour; if it's black then it's not cooked and you should steam it for a few minutes until it turns red. Remove the legs and spongy gills from the body, and suck the meat and juices from the legs yum! With the body, remove the paper-like shells that separate the meat — here you will find a fair amount of the lobster's rib meat. Crack the claws then take out the meat. Gently twist off the tail from the body.
Break off the flippers and treat them in the same manner as the small legs - there's tender meat here too. Now you can get the tail meat out. Place your thumb on the back of the tail where the flippers were and push hard. The tail meat will slide out the top. Separate the back of the body and eat the green tomalley optional.
Crack the body open sideways and remove the last bits of meat. You now eat lobstah like a native Mainah! They will be cooked to perfection and stay hot for about an hour when packaged to go. Want to see how fisherman catch Maine lobsters?
